This recipe of Veg Dum Biryani  is very close to my heart. Everyone at my home is a rice lover person. Hence the first-ever, complicated dish that I prepared was Dum Biryani. It turned out to be so delicious that everyone loved it  . This recipe is a great balance of authentic Biryani spices, fluffy Basmati rice and fresh vegetables!

Ingredients for Veg Dum Biryani Recipe

  • As required ✅ For rice ingredients
  • 1.25 cups Water
  • 1/2 nos Bay leaves
  • 1/4 nos inch      Cinnamon
  • 1 nos Cloves
  • 1/4 nos satr Annis
  • 0.17 nos Black pepper
  • 1/2 nos tsp        oil
  • 1/4 tsp Salt
  • 5.50 cups basmati rice (wash + minutes soaked)
  • As required ✅ For Biryani gravy
  • 1 tbsp Oil
  • 1/2 tbsp Ghee
  • 1/4 nos Tsp        garam masala
  • 1/4 nos Bay leaves
  • 1/4 inch Cinnamon Stick
  • 1 nos Cloves
  • 1/4 nos star annis
  • 1/4 tsp caraway seeds/ shaahi jeera
  • 1 nos Green cardamoms
  • 1/2 nos big size     Onion ( fine chopped)
  • 3/4 tbsp biryani masala powder
  • As required Salt as per taste
  • 1/4 cup Water luke warm
  • 1/4 cup Paneer
  • As required ✅ For marination
  • 62.50 nos Grams    Curd
  • 1/2 nos tbsp              Oil
  • 1/2 tbsp Lemon juice
  • 1/2 nos Green Chilli (chopped)
  • 1/2 tsp ginger garlic paste
  • 1/2 nos cups            Mix veggies ( as per choice )
  • 1/4 tbsp Kashmir red chilli powder
  • As required ½ Tsp             Turmeric powder
  • As required ½ tbsp           garam masala
  • 1/4 tbsp Kashmiri red chilli powder
  • As required ¼ cup             fresh coriander + mint
  • As required ✅ For Briyani garnishing ingredients ....
  • As required ¼ cup     mint (chopped)
  • As required ¼ cup      fresh coriander (chopped )
  • 1/4 nos tbsp      ghee
  • As required ½ cup      fried onion / barista
  • As required ¼ cup       soaked kesar stand
  • 1/4 nos tsp          Biryani masala ( spreading on top )
  • As required Wheat flour dough/ silver foil for
  • As required Mouth seeling
  • 1/4 tbsp ghee + live charcoal

Directions: Veg Dum Biryani Recipe

  • STEP 1.✅How to  marinate vegetables for Biryani
  • STEP 2.✅ Firstly, in a bowl take  curd, ginger garlic paste, chilli, lemon juice, oil, turmeric, chilli powder, garam masala and salt. Whisk and mix well making sure everything is well combined.
  • STEP 3.✅ Then add as per choice all vegetables , coriander and mint  .Mix well making sure everything is well combined .
  • STEP 4.✅ Now give it a smokey flavour , I'm taking a live charcoal  + and add little ghee to it. And  cover marinate for 3/5  minutes.
  • STEP 5.✅ How To Make Biryani Base
  • STEP 6.✅ Firstly, in a large kadai heat oil and ghee
  • STEP 7.Add onion and fry until the onions turn golden brown.
  • STEP 8.✅ Then add the prepared marination mixture and mix well.
  • STEP 9.✅ Cover and cook for 10 minutes, or until the vegetables are cooked almost. keep aside.
  • STEP 10.✅ let's prepare rice for biryani
  • STEP 11.✅ Firstly, rinse and soak basmati rice for 30 minutes.
  • STEP 12.✅ Now in a large vessel take enough water.
  • STEP 13.Add all  spices and oil boil for 5 minutes, or until the water turns flavourful.
  • STEP 14.✅ Now add in soaked basmati rice and mix gently. Boil for 5. minutes or until the rice is 80% cooked.
  • STEP 15.✅ Further, drain off the rice, and the rice is ready for layering in the biryani.
  • STEP 16.✅ For Layer The biryani
  • STEP 17.✅ Firstly, spread out the biyani gravy base onto the kadai. top with fried onion, coriander, and mint.
  • STEP 18.✅ Further top with cooked rice and level out uniformly.Also top with fried onion, coriander, and mint.
  • STEP 19.✅ Pour saffron milk,  spread biryani masala and ghee. Cover and seal using almunium foil or flour dough .
  • STEP 20.✅ Simmer for 20 minutes, or until is cooked well. We all make sure to rest for at least 30 minute , before serving the veg dum biryani.
  • STEP 21.Finally, enjoy veg dum biryani with salan and raita.
