How to Make Vatapa Recipe

STEP 01

1 take all the stock ingredients in a pan and simmer it for 30 minutes.

STEP 02

2 throw away the solids and keep the liquid stock for further use.

STEP 03

3 heat a pan over high heat and coat it with cooking spray.

STEP 04

4 add onion, sugar and salt. Saute it for 3 minutes and add ginger, 3 garlic cloves, and chile.

STEP 05

5 saute for 30 seconds and add stock, tomato, and beer; bring to a boil.

STEP 06

6 cook this until it gets reduced to 6 cups.

STEP 07

7 give it a nice stir and add coconut milk and simmer for 20 minutes.

STEP 08

8 to this add fish and cook for 5 minutes at medium to high heat.

STEP 09

9 garnish with some cilantro and serve with hot rice
