Ingredients for Vatapa Recipe

  • As required Stock
  • 1 cup Water
  • 0.17 No.s chopped onion
  • 0.13 cup chopped carrot
  • 0.33 tablespoon grated ginger
  • 0.67 cloves garlic
  • 75 gram fish bones
  • 0.17 No.s Cooking spray
  • 0.17 cup chopped onions
  • 0.17 tablespoon Brown Sugar
  • 0.17 teaspoon Salt
  • 1/2 c;oves garlic
  • 0.17 No.s serrano chile
  • 1/2 cup chopped tomatoes
  • 0.17 bottle beer
  • 0.17 can coconut milk
  • 75 gram white fish
  • 0.06 cup Cilantro
  • 0.17 tablespoon Lime Juice
  • 0.17 cup cooked basmati rice
  • 1 No.s Lime wedges

Directions: Vatapa Recipe

step 1

  • STEP 1.1 take all the stock ingredients in a pan and simmer it for 30 minutes.

step 2

  • STEP 2.2 throw away the solids and keep the liquid stock for further use.

step 3

  • STEP 3.3 heat a pan over high heat and coat it with cooking spray.

step 4

  • STEP 4.4 add onion, sugar and salt. Saute it for 3 minutes and add ginger, 3 garlic cloves, and chile.

step 5

  • STEP 5.5 saute for 30 seconds and add stock, tomato, and beer; bring to a boil.

step 6

  • STEP 6.6 cook this until it gets reduced to 6 cups.

step 7

  • STEP 7.7 give it a nice stir and add coconut milk and simmer for 20 minutes.

step 8

  • STEP 8.8 to this add fish and cook for 5 minutes at medium to high heat.

step 9

  • STEP 9.9 garnish with some cilantro and serve with hot rice
