A stir-fry with sword beans cooked in Kerala style.Valari Payar Thoran is made from stir frying sword beans in a spicy coconut and powdered spice mix.

in a pan heat cooking oil and add 1 tsp mustard seeds. Wait for the mustard seeds to splutter and then add in 1 green chilly split in half and 1 small onion chopped.
saute the ingredients till the onion turns transparent brown.
transfer to the pan 5 chopped sword beans.
add ½ tsp of turmeric powder and a pinch of salt for taste. Mix well all the ingredients.
cook covered in the vessel for 5-10 minutes on a medium flame.
add 1 cup of grated coconut and stir-cook for a few more minutes.
turn off the flame. Sword bean stir fry is ready.
