A traditional dish from Kathiyavad that uses leftover roti cooked mixed spices till crispy. Vaghareli in Gujarati means tempered. We generally add mustard and cumin seeds with a bit of garlic, ginger and green chillis. Rotli is roti, a wheat flatbread. Rotli is a staple in most Gujarati homes so its common to find that one will often have leftover rotlis at home. Vaghareli rotli can be a snack time meal tasting yummy when sprinkled with a bit of chevdo, bhusu or sev or it can be a wholesome but light dinner meal.

Ingredients for Vagharelli Rotli Recipe

  • 1 tablespoon Ghee or oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 1/4 teaspoon Asafoetida
  • 1 sprig Curry leaves
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Red chilli powder
  • 2 piece Leftover roti cups

Directions: Vagharelli Rotli Recipe

step 1

  • STEP 1.In a preheated pan add 1 tbsp ghee or oil, 1 tsp cumin seeds, 1 tsp mustard seeds, ¼ tsp asafoetida and stir till the seeds crackle.

step 2

  • STEP 1.Add 1 sprig of curry leaves torn , ½ tsp turmeric, ½ tsp red chilli powder, 2 cups leftover roti torn into small pieces and salt to taste.

step 3

  • STEP 1.Keep stirring for 5 minutes on medium heat to mix the roti pieces with the masala and cook till the roti turns crisp. Turn off the heat.
