How to Make Unnakkaya Recipe

Cooking Directions

STEP 01

Wash the plantains and peel off the skin. Cut horizontally into two halves. Cut each half vertically into three pieces.

STEP 02

Steam for 5 minutes in a closed vessel. Mash the boiled plantains.

STEP 03

To prepare the filling, add to a pan 3 tbsp cashews and 3 tbsp raisins with 1 tbsp ghee on a medium flame. Stir fry cashews and raisins.

STEP 04

Into the same pan break in 4 eggs, 2 tbsp sugar and 1tsp cardamom powder. Continue stirring till the mix is dry.

STEP 05

Make medium size balls from mashed plantains. Spread and flatten each ball on the palm with your fingers.

STEP 06

Stuff in the filling and roll to the shape of a spindle.

STEP 07

For frying: Preheat a deep fry pan with cooking oil on medium flame.

STEP 08

Gently drop each unnakkaya into the pan. Flip and fry both the sides till pale gold.
