Delicious and sweet tea time snack.Undan pori which translates to ‘fried dough balls’ are a charming, rustic teatime snack from Kerala. They are a staple at road-side chaya kada or small eateries serving tea and snacks.They are also called sweet bonda or gundu (an ode to its cute round shape). Improperly made undan pori can be a literal pain in your teeth but if made properly, they are simply irresistible – crisp on the outside, soft on the inside, and fragrant with banana and cardamom.

Ingredients for Undanpori Recipe

  • 0.17 cup Wheat Flour
  • 0.33 tablespoon Maida
  • 0.33 tablespoon Rice flour
  • As required Salt
  • 1 piece Jaggery
  • 0.08 cup Water
  • 0.33 pinch Dry ginger powder
  • 0.33 pinch Baking soda
  • 0.33 pinch Cardamom powder
  • 0.33 pinch Cumin powder
  • 0.67 No.s Banana small
  • As required Oil to fry

Directions: Undanpori Recipe

Preparation Directions

  • STEP 1.Take 3 pieces of jaggery in a pan and add ¼ cup water. Heat it until the jaggery melts completely. Using a sieve, filter the jaggery solution.

Cooking Directions

  • STEP 1.Take ½ cup wheat flour in a bowl and add 1tbsp maida, 1tbsp roasted rice flour. Add a pinch of salt and add a pinch of baking soda. Mix well.
  • STEP 2.Peel and chop the 2 bananas . Grind it in a jar with sugar. After grinding it well, transfer it to the flour. Add the jaggery solution and mix well. Add a pinch of dry ginger powder, a pinch of cumin powder, a pinch of cardamom powder and mix well.
  • STEP 3.Heat oil in a pan. Take a small portion of the batter and put it in the hot oil. Fry it in medium flame. Repeat the process until the batter is finished.
  • STEP 4.Fry it until golden brown.
  • STEP 5.Undanpori is ready to be served.
