A delicious flavourful rice seasoned with turmeric, lemon juice and ground coriander powder. Indian Lemon Turmeric Rice is Vegan as well as Gluten free Recipe: sauteed rice in coconut oil, turmeric, and lemon is delicious and packed with flavors. Added peanuts and coconut flakes for taste and texture. Makes for a perfect side dish or light lunch. It’s a side dish that’s made using cooked rice, where rice is sauteed in a mixture of oil/ghee, curry leaves, salt, chilies, peanuts, and Indian spices.

Ingredients for Turmeric Lemon Rice Recipe

  • 100 gram Cooked Rice
  • 1 Ginger finely chopped cm
  • 1 Garlic finely chopped clove
  • 1 tablespoon Turmeric powder
  • 1 Onion Finely Chopped
  • 1 Spring onion finely chopped
  • 2 Tomatodiced into small cubes Nos
  • 40 gram Coriander finely chopped
  • 1 teaspoon Coriander powder
  • 1 teaspoon Lemon juice
  • As required Salt
  • 2 tablespoon Oil

Directions: Turmeric Lemon Rice Recipe

step 1

  • STEP 1.In a small bowl add 2 tomatoes diced into small cubes, 1 finely chopped spring onions, 40 gm finely chopped coriander and salt to taste. Mix well.

  • STEP 1.In a pan heat 2 tbsp oil, add 1 cm finely chopped ginger, 1 clove finely chopped garlic and 1 finely chopped onion. Stir fry for a few seconds.

  • STEP 1.Add 1 tbsp turmeric powder and 1 tsp coriander powder. Mix together.

  • STEP 1.Fry the ingredients for 2 minutes till fragrant and onions have softened.

step 5

  • STEP 1.Then add 100 gm cooked rice and mix to combine all the flavours well. Stir fry for 2 minutes.

step 6

  • STEP 1.Drizzle 1 tsp lemon juice and add salt to taste. Cook for 5 minutes till the rice becomes fluffy and heated through.

  • STEP 1.Transfer to a serving bowl and top with the prepared tomato mixture.
