  • 1/2 tablespoon Oil
  • 1/4 teaspoon Mustard Seeds

  • 1/4 teaspoon Red Chili Powder
  • 1/4 teaspoon Coriander Powder

Cooking Directions

  • STEP 1.Wash and peel the ridge gourd. Cut it into small pieces.
  • STEP 2.Clean the colocasia leaves and chop them finely.
  • STEP 3.Heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves and asafoetida.
  • STEP 4.Add the chopped ridge gourd and colocasia leaves to the pan. Mix well.
  • STEP 5.Add turmeric powder, red chili powder, coriander powder, and salt. Mix again.
  • STEP 6.Cover the pan and cook on low heat for about 15-20 minutes, or until the vegetables are tender.
  • STEP 7.Garnish with freshly chopped coriander leaves and serve hot with roti or rice.

  • Make sure to choose fresh and tender ridge gourd for the best taste.
  • You can adjust the spice level according to your preference by adding more or less red chili powder.
