Ingredients for Tomato Quinoa And Mushroom Spinch Sir Fry Recipe
1 cup Quinoa
2 cup Water
1 teaspoon Mustard seeds
1 teaspoon Cumin seeds
4 Garlicfinely chopped cloves
1 cup Pearl onions chopped or regular onions sliced 1
1 teaspoon Cardamom Powder
3 No.s Tomatoes finely chopped
1/2 teaspoon Red Chilli powder
1/2 teaspoon Turmeric powder
1 teaspoon Sambar powder
As required Salt
1 sprig Curry leaves
1 teaspoon Ghee

STEP 1.In a preheated pressure cooker add 1 1 tbsp oil, 1 tsp mustard seeds, 1 tsp cumin seeds allow it crackle and then add 4 cloves garlic finely chopped, 1 thinly sliced onion, 2 finely chopped green chillies. Saute until the onions are soft.

STEP 1.Next add 3 finely chopped tomatoes, 1 sprig curry leaf roughly torn and mix well. Saute till tomatoes soften.

STEP 1.Add 1 tsp sambar powder, ½ tsp red chilli powder, ½ tsp turmeric powder, 1 tsp cardamom powder or 3 roughly pounded cardamoms.

STEP 1.Then add 1 cup washed quinoa and mix well with other ingredients. Add 2 cups of water, salt to taste. Pressure cook for 2 whistles and turn off the heat. Allow pressure to release naturally.
step 5
STEP 1.Open the cooker and check the quinoa. Adjust salt if required. Add 1 tsp ghee for taste.
step 6
STEP 1.Serve hot with spinach mushroom stir-fry.
