Tomato Methi Rice is is very easy to make. It's a healthy recipe, tomatoes and methi leaves are rich in vitamin C and Iron which are essential for our body .
STEP 1.Soak 2 cups basmati rice in water for at least 1/2 an hour. Then cook in 1 1/2 cup water with salt to taste.
STEP 2.Take a pan. Add ghee, ginger garlic paste, cinnamon, cloves, dry red chilli, jeera, hing, curry leaves, bay leaf, cashews, stir fry for a minute.
STEP 3.Add chopped methi leaves. Stir well for a minute. Then add chopped tomatoes. Cover a lid, cook till tomatoes turn soft and mushy.
STEP 4.Now add salt to taste carefully as we already added salt in cooked rice. Add turmeric powder, chilli powder, coriander powder, pav-bhaji masala, mix well.
STEP 5.Add cooked rice in pan, mix well, cover the lid for couple of minutes. Turn off gas.
STEP 6.Tomato Methi Rice is ready to serve. Garnish with coriander.. Enjoy hot and yummy rice.
