A wholesome nutritious soup for a weeknight dinner made from cooked chickpeas and tomatoes blended in coconut milk. This is a perfect pantry soup. Most the ingredients used are in hand already. This recipe is all about eating fresh. The soup is made of - can of tomatoes, chickpeas, and coconut milk. The chickpeas thickens the soup the coconut creates a creamy, velvety, texture without adding any real cream. It is mostly served with grilled sandwich.

Ingredients for Tomato Chickpeas And Coconut Milk Soup Recipe

  • 1 teaspoon Oil
  • 2 Garlic Cloves
  • 1 cup Chickpea cooked
  • 1 cup Tomato cooked
  • 1 cup Coconut milk
  • 1/2 teaspoon Red chilli powder
  • As required Salt
  • flakes Red chilli for garnish

Directions: Tomato Chickpeas And Coconut Milk Soup Recipe

step 1

  • STEP 1.Soak 1 cup chickpeas overnight or for 8 hours and pressure cook to soft. Blanch tomatoes for 1 cup quantity.

step 3

  • STEP 1.In a tall blending jar, add 1 cup cooked chickpea and1 cup cooked tomatoes.

step 4

  • STEP 1.Cloves of garlic, 1 cup coconut milk, ½ tsp chilli powder or smoked paprika

step 5

  • STEP 2.Powder, salt to taste. Close the blender and blend to get a thick smooth

step 6

  • STEP 3.Consistency. Add water to make a thinner consistency and blend again.

step 7

  • STEP 1.Tomato chickpeas soup is ready.
