  • 3 Tomatoes medium size cut into chunks Nos
  • 3 Eggs Nos
  • 1/2 teaspoon Salt
  • 1 teaspoon Sugar
  • 3 tablespoon Oil
  • As required Chopped spring onion for garnish

step 1

  • STEP 1.1 blanch 3 tomatoes by cutting a cross in the skin and putting them on boiling water for 20 seconds.

step 2

  • STEP 2.2 when the skin cracks and becomes loose take them out of the water and transfer them to an ice bath to cool them quickly.

step 3

  • STEP 1.peel off the skin. and cut 3 blanched and skinned tomatoes into chunks.

  • STEP 3.1 cut 3 blanched and skinned tomatoes into chunks.

  • STEP 4.2 in a bowl crack 3 eggs and whisk them together.

  • STEP 5.3 put a wok on maximum heat and let it get hot for 10 to 15 seconds.

  • STEP 6.4 add 3 tbsp oil to the hot wok and let it heat till it smokes.

  • STEP 7.5 then add the whisked eggs and let it cook for 30 seconds.

  • STEP 8.6 the egg will be fluffy. Break it into smaller pieces and take it out of the wok, keep aside.

  • STEP 9.7 add the tomatoes to the hot wok, with 1 tsp sugar and ½ tsp salt.

  • STEP 10.8 turn the heat to medium, cover the wok and let the tomatoes cook for as long as desired, till completely soft, or semi-cooked as per taste.

  • STEP 11.9 at this stage return the egg to the wok and stir till well combined.

  • STEP 12.10 lastly add chopped spring onion.

step 14

  • STEP 13.11 stir fried egg and tomato is ready to serve.

step 15

  • STEP 14.12 serve hot with white rice.
