Ingredients for Tod Mun Pla Recipe

  • As required For Tod Mun Pla
  • 350 gram tender fish meat, dried thoroughly if thawed from frozen
  • 2 tablespoon 3 red curry paste
  • 1 Egg Yolk
  • 1 teaspoon Sugar
  • 1/2 cup long beans
  • 0.33 cup Thai basil or holy basil, sliced into ribbons if large
  • 5 kaffir lime leaves, finely julienned
  • As required Fish sauce, as needed
  • As required Sweet Chili Dipping Sauce
  • 3 cloves garlic
  • 1 spur chili or another type of big red chili pepper that’s not too spicy
  • As required Thai chilies , optional
  • 1/2 cup Sugar
  • 1/2 teaspoon Salt
  • 0.33 cup white vinegar, cane vinegar or rice vinegar
  • 3 tablespoon Water
  • As required Cucumber slices for serving
  • As required Optional add ins for the dipping sauce: roasted crushed peanuts, sliced shallots

step 1

  • STEP 1.Place chili, garlic, vinegar, water, sugar, and salt in a liquidizer and mix it simply till it turns into a smooth paste and no chunks are left behind.

  • STEP 1.Pour the alloyed chilies into a tiny low pot and let it simmer for about 3-5 minutes. Now combine the fish, curry paste, egg yolk, and sugar in a bowl.

  • STEP 1.Then keep the process for many minutes longer till the fish is firm enough that it holds its form well once spooned.

  • STEP 2.Transfer the fish paste into a bowl and add cut long beans, thai basil, and kaffir lime leaves; stir till well combined.

  • STEP 1.Heat a pan over medium heat till hot, then add enough oil to coat the bottom of the pan. Wet your hands with a tablespoon of cold water, then scoop a heaping tablespoon of fish paste with the wet spoon and place it in your hands.

  • STEP 1.Gently pat the fish cakes and make patties out of it. Place them in a preheated pan and fry till its nicely cooked and brown from both the sides.
