Directions: Oven Baked Taiwanese Popcorn Chicken Recipe

Cooking Directions

  • STEP 1.In a large bowl, combine the buttermilk and chicken pieces. Let them marinate in the refrigerator for at least 30 minutes, or longer if you have the time.
  • STEP 2.In a separate bowl, combine the potato starch (or cornstarch), salt, black pepper, paprika, and garlic powder.
  • STEP 3.Take the marinated chicken pieces, allowing any excess buttermilk to drip off. Coat them evenly with the starch mixture and place them on the prepared baking sheet.
  • STEP 4.Lightly spray the coated chicken with cooking spray to help achieve a crispy texture in the oven.
  • STEP 5.Bake for about 20-25 minutes in a preheated (220C) oven or until the chicken is golden brown and crispy, turning the pieces halfway through to ensure even cooking.

Cooking Tips

  • For an extra layer of flavour, add a pinch of your favourite spices or seasonings to the starch mixture, such as chilli powder for some heat or a dash of cayenne pepper.
  • If you have a wire rack, place it on top of the baking sheet before adding the coated chicken. This elevates the chicken, allowing hot air to circulate beneath, resulting in even crispier popcorn chicken.

Serving Tips

  • Taiwanese Popcorn Chicken is best served with a dipping sauce. You can make a simple dipping sauce by mixing equal parts of soy sauce and vinegar, then add a dash of garlic and chilli for extra zing.
  • For a complete meal, consider serving the popcorn chicken with jasmine rice or as a topping for a salad.
