Cooking Directions

  • STEP 1.Soak rice and lentils separately for a few hours, then grind them into a smooth batter.
  • STEP 2.Add salt and allow the batter to ferment overnight.
  • STEP 3.Heat a tawa (griddle) and place a thavalai (cloth) on it.
  • STEP 4.Pour a ladleful of batter on the cloth and spread it in a circular motion.
  • STEP 5.Drizzle oil around the edges and cook until golden brown.
  • STEP 6.Flip the dosai and cook the other side as well.
  • STEP 7.Serve hot with coconut chutney and sambar.

Cooking Tips

  • Make sure the batter is well fermented for a soft and fluffy dosai.
  • Use a non-stick tawa for easy flipping and cooking.
  • You can add finely chopped onions, green chilies, or coriander leaves to the batter for extra flavor.
  • To make the dosai extra crispy, sprinkle some water on the tawa before pouring the batter.
