  • STEP 1.To make the dosai batter, soak rice and lentils overnight, then grind them into a smooth paste.
  • STEP 2.Ferment the batter for 8-10 hours or overnight, until it becomes slightly sour.
  • STEP 3.To make the tomato and onion mixture, heat oil in a pan and saut茅 onions, tomatoes, and spices until they are cooked and fragrant.
  • STEP 4.Heat a dosai tawa or non-stick pan and pour a ladleful of batter onto it. Spread it in a circular motion to form a thin dosai.
  • STEP 5.Drizzle oil around the edges and cook until the dosai turns golden brown and crispy.
  • STEP 6.Flip the dosai and cook for a minute on the other side.
  • STEP 7.Serve the Thakkali Dosai hot with coconut chutney and sambar.
  • STEP 8.Store any leftover batter in the refrigerator for up to 2-3 days.
