Ingredients for Thai Roast Chicken & Gravy Recipe

  • 1 whole chicken
  • 4 stalks of lemongrass, cut in half and smashed
  • 10 slices galangal
  • 5 kaffir lime leaves, torn
  • 8 slices ginger
  • 2 heads shallots, diced
  • As required Marinade
  • 1/2 teaspoon white peppercorns
  • 1/2 teaspoon black peppercorns
  • 6 cloves garlic
  • 3 cilantro roots or 6 cilantro stems
  • 1/2 teaspoon Salt
  • 1 tablespoon finely chopped palm sugar
  • 3 tablespoon fish sauce
  • 1 teaspoon black soy sauce or dark soy sauce
  • 1/4 cup Water
  • As required Gravy
  • 1 cup 1 0.5 water
  • 2 tablespoon 4 coconut milk
  • 2 tablespoon Cornstarch
  • As required A squeeze of lime juice or lemon juice
  • As required Black soy sauce, as needed
