#curry Thai Red Curry, like most Asian curries, has a great depth of flavour. The sauce flavour is complex, it has many layers from all the ingredients in the paste that is then simmered with broth and coconut milk. It’s sweet and savoury, and it is quite rich. The sauce goes very well when you cook chicken in this gravy and it is awesome this way the chicken turns out to be yummy.

Ingredients for Thai Red Chicken Curry Recipe

  • 700 g Curry cut chicken
  • 1/4 Cup chopped red and yellow bell pepper
  • 6 Pieces thick garlic cloves
  • 1 Pieces onion
  • A Bunch chopped spring onions
  • A Handful chopped bokchoi leaves
  • 1/4 Cup chopped carrot
  • 2 Pieces lemon grass
  • 1 Tsp salt
  • 5 Pieces Basil leaves
  • As Required Thai Red sauce
  • 4 Tbsp Thai red curry paste
  • 4 Tbsp coconut powder
  • 1/2 Cup water
  • 2 Pieces kafir lime leaves
  • 2 Tbsp kafir lime juice
  • 1 Tbsp paprika powder

Directions: Thai Red Chicken Curry Recipe

  • STEP 1.Add 2 tbsp oil, 6 minced garlic cloves, chopped spring onions, chopped bokchoi, 2 lemongrasses, and saute well.
  • STEP 2.Add chopped red and yellow bell peppers, carrot, and saute till soft. Meanwhile take 4 tbsp Thai red curry paste, 4 tbsp coconut powder, 1/2 cup water and mix well and keep aside.
  • STEP 3.I have fried the chicken only with onions and salt and kept it aside. Add the fried chicken to the above mixture.
  • STEP 4.Now add the Thai curry paste, green chilies, Kafir lime leaves, paprika powder, and simmer.
  • STEP 5.Allow to cook till the gravy thickens and chicken is well simmered in the gravy with vegetables. Finally add 2 tbsp kafir lime juice, basil leaves for the flavour and enjoy with steamed rice.
