Ingredients for Thai Red Chicken Curry Recipe

  • 500 gram Chicken Breasts
  • 3 No.s Kaffir lime leaves
  • 1/2 piece Lime
  • 1 Fresh red chilli Nos
  • 400 milliliter Coconut milk
  • 1 tablespoon Fish sauce
  • 130 milliliter Chicken Stock
  • 2 tablespoon Peanut oil
  • 3 No.s Garlic Cloves
  • 2 teaspoon Shrimp paste
  • 5 No.s Dried red chillies
  • 1/2 piece Ginger
  • 2 No.s Fresh chili pepper
  • 1 bunch Coriander
  • 2 No.s Lemon grass
  • 1 No.s Red Onion
  • 2 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Ground coriander

Directions: Thai Red Chicken Curry Recipe

step 1

  • STEP 1.1 place all the chopped ingredients into a food processor.

step 2

  • STEP 2.2 place 2 tsp ground cumin, 1 tsp paprika, 1 tsp ground coriander into a pan and roast for 2 minutes on medium heat.

step 3

  • STEP 3.3 add the roasted powders to the food processor along with 2 tsp shrimp paste. Blend for 2 minutes.

  • STEP 4.4 then add1 tbsp peanut oil and blend for 5 minutes to make a smooth paste.

  • STEP 5.5 slice 1 fresh red chili for garnish.

  • STEP 6.6 in a wok heat 1 tbsp peanut oil, add the ground curry paste and stir fry for 2 minutes until fragrant.

  • STEP 7.7 add 400 ml coconut milk and stir all together.

  • STEP 8.8 add 130 ml chicken stock and mix to combine all the ingredients in the wok.

  • STEP 9.9 tear and add 2 kaffir leaves, 1 tbsp fish sauce, juice of ½ lime and bring to a boil.

step 10

  • STEP 10.10 then add 500 gm thinly sliced chicken breasts and stir.

step 11

  • STEP 11.11 cover the wok and simmer for 15 to 20 minutes on medium heat. Stir at regular intervals.

step 12

  • STEP 12.12 turn off the heat. Garnish with the sliced red chili and serve.
