About Thai Basil Pineapple Fried Rice Recipe:

A delicious fried rice flavoured stir fried vegetables, basil leaves, pineapple and spicy sauce. It is different from Chinese fried rice in that it is prepared with jasmine rice rather than regular long grain rice. Like Chinese fried rice, Thai fried rice does contain scrambled egg, but the egg is mixed in with the rice while still slightly runny, coating the rice grains and creating an incredibly creamy dish. Thai-style sweet and spicy pineapple fried rice with red bell pepper, cashews and cilantro. This is a healthy and quick, vegetarian weeknight dinner! This dish comes together very quickly, so be sure to have your ingredients (including chilled leftover rice) prepped in advance.

How to Make Thai Basil Pineapple Fried Rice Recipe


Peel and dice pineapple and pressure cook for 3 whistles. Use ½ cup for this recipe.

In a preheated pan add 1 tsp sesame oil, 1 tsp grated ginger, 1 tsp chopped garlic. Lightly stir fry to infuse into the oil. Add ½ cup spring onion bulbs and leaves. Briskly stir fry on high heat to retain the crunch of the vegetables.

Next add ½ cup chopped red bell peppers, ½ cup chopped green capsicum, ½ finely chopped carrots, ½ cup chopped beans, salt to taste. Briskly stir fry for 3 to 5 minutes till vegetables turn a little tender but are still crunchy.

Then add ½ cup cooked pineapple, 1 cup chopped thai basil, 1 tbsp red chilli sauce, 1 tbsp soy sauce. Stir fry for a few seconds till all the ingredients in the pan are well combined.

At this stage add 2 cups of cooked rice. The rice should be cooked to a grainy texture and not soft and mushy. Toss together. Check for salt and adjust accordingly. Cover the pan and allow to steam cook for 3 to 4 minutes so the race can absorb all the flavours.

Thai basil pineapple fried rice is ready. Serve with kung pow tofu or gobi manchurian.
