- 1.50 pound pork collar butt
- 5 garlic cloves
- 2-3 cilantro roots / 6stems
- 2 tablespoon black soy sauce
- 2 tablespoon oyster sauce
- 3 tablespoon palm sugar
- 1 tablespoon vegetable oil
- 1/4 cup coconut milk
- 3 tablespoon Water
- 1/4 teaspoon black peppercorns
- 1/4 teaspoon white peppercorns
- 3 tablespoon Cornstarch

How to Make Thai Barbecue (moogata) Recipe
STEP 01
Marinate- take a mortar & pestle, start adding the garlic cloves, cilantro roots, both the peppercorns, and start pounding it into a fine paste.
STEP 02
Now add 3tbsp palm sugar, and pound it until the sugar is dissolved and mixed well with the rest of the ingredients.
STEP 03
Next add the sauces- oyster and black soy sauce (each 2tbsp), vegetable oil, coconut milk, and some water(3tbsp), now give the mixture a good stir.
STEP 04
Now it’s time to cut the pork, so first cut it in a cylindrical shape and then slice it. It will be around a 3-inch small.
STEP 05
Take the sliced pork in a bowl and then pour the marinade all over it. Mix the marinade well with pork and put it in the freezer for at least 8 hours or keep it overnight for the best results.
STEP 06
After 8 hours of marination, add the cornstarch and mix it well with the marinated pork.
STEP 07
Skew the pork in the skewers (if you are using wooden skewers, make sure to soak it in water overnight).
STEP 08
Start adding the pork skewers one by one in the tray and keep it for several hours at least 8hours or overnight in the freezer.
STEP 09
Now it’s the time for results, add the skewers on the grilling machine (put down the foil to keep skewers cool and avoid burning).
STEP 10
Let it grill for 1.5-2mins, flip them on the other side, and repeat the same.
STEP 11
And our pork skewers are ready.
STEP 12
Serve it with some sticky rice.
