  • 90 gram pork belly
  • 2 teaspoon oyster sauce
  • 2 teaspoon light soy sauce
  • 1/2 turmerictofu
  • 5 cm ginger
  • 40 gram preserved vegetables
  • 3 Nos salted chinese plums
  • 2 Nos shiitake mushrooms
  • 1 Nos scallions
  • 100 milliliter mushroom water
  • 1 tablespoon shaoxing wine
  • 1 tablespoon sesame oil
  • 1 tablespoon light soy sauce
  • 2 tablespoon salted chinese plum juice
  • 5 Nos cherry tomatoes
  • 1 Nos fish
  • 2 Nos garlic cloves
  • 2 tablespoon Oil
  • 1 Nos fresh chilli peppers

How to Make Teochew Steamed Fish Recipe

Soak mushroom until they turn soft. Slice the mushrooms. Marinate pork belly with soy sauce and oyster sauce for 15 minutes. Pan fry the pork belly at low flame until brown.

Take a bowl/plate and add fried pork belly, tofu, ginger slices and lower part of scallions, some preserved vegetables, salted chinese plums and shiitake mushroom.

Using the same pan add soaked water of mushroom, shaoxing wine, sesame oil, soy sauce and keep it aside. Score the fish from both sides.

Now lightly rub the skin of the fish from both the sides and add juice of salted preserved plums.

Gently place fish on top of the ingredients and top the fish with the remaining vegetables, salted chinese plums, slices of mushroom, cherry and tomatoes on the fish.

Pour the gravy on the fish. Steam the fish for 12 mins into a pan. Add some oil in a pan and fry garlic into it until golden brown. Pour garlic oil onto fish before serving.
