Ingredients for Tender Pot Roast Recipe

  • 1/2 tablespoon Olive oil
  • 1 pound Boneless chuck roast
  • As required Kosher salt and cracked black pepper, to taste
  • 1/2 teaspoon Fresh rosemary, chopped
  • 2 Cloves of garlic, smashed and minced
  • 1/2 Yellow onion, cut into wedges
  • 1/2 pound Baby potatoes
  • 2 ounce Fresh button mushrooms, you could also get cremini mushrooms and slice them into quarters, since they're larger. button mushrooms can be left whole
  • 1 inch 2 carrots, cut into
  • 1/2 inch 1 rib of celery, cut into
  • sprig A few fresh thyme sprigs
  • sprig A few fresh rosemary sprigs
  • 1/4 cup Beef broth
  • 0.13 cup Dry red wine
  • 1/2 tablespoon Stone ground mustard, dijon mustard will also work
  • 1/2 tablespoon Brown sugar
  • 1/4 tablespoon Balsamic vinegar
  • 1/2 teaspoon Beef bouillon paste, better than bouillon works really well
  • 1/2 tablespoon All purpose flour
  • As required Fresh chopped parsley, to serve
