Tangy Tofu Lime Curry Recipe

 Tofu cooked with courgette and peppers in coconut milk and red curry paste, flavoured with lime juice and maple syrup. This is a quick and tasty sweet and sour dish. Tofu is stir-fried with zucchini or any other vegetable of preference, red bell pepper, capsicum or onion then simmered in a coconut curry sauce. This recipe takes tofu to next level, you'll stir crispy tofu to a tangy lime agave and soy sauce before serving it over sticky ginger and garlic-infused cooked rice.

Ingredients for Tangy Tofu Lime Curry Recipe

  • 400 gram Tofu
  • 2 tablespoon Red Curry Paste
  • 3 tablespoon Peanut oil
  • 10 gram Ginger
  • 1 No.s Red pepper
  • 300 gram Courgette
  • 3 tablespoon Lime juice
  • 15 gram Basil
  • 2 tablespoon Maple syrup
  • 3 tablespoon Light soy sauce
  • 400 milliliter Coconut milk

Directions: Tangy Tofu Lime Curry Recipe

step 1

  • STEP 1.In a wok heat 2 tbsp peanut oil, add 400 gm tofu cut into bite size pieces and fry on medium heat till golden. Remove and drain the tofu.

step 2

  • STEP 1.In the same pan add 300 gm courgette roughly diced, 1 red pepper cut into bite size pieces and stir fry for 2 minutes. Then remove and drain.

step 3

  • STEP 1.To the hot wok add 1 tbsp peanut oil, 2 tbsp red curry paste, 10 gm finely chopped ginger and stir fry for a few seconds.

  • STEP 1.Add 3 tbsp light soy sauce, 2 tbsp maple syrup, 3 tbsp lime juice and stir together.

step 5

  • STEP 1.Then add the fried tofu, 400 ml coconut milk and simmer for 2 minutes.

step 6

  • STEP 1.Add the sauteed courgette and red pepper, salt to taste and cook for another 1 minute.

step 7

  • STEP 1.Add 15 gm finely chopped basil and stir. Transfer to a dish and serve hot with rice.
