How to Make Tangy Tofu Lime Curry Recipe

step 1

STEP 01

In a wok heat 2 tbsp peanut oil, add 400 gm tofu cut into bite size pieces and fry on medium heat till golden. Remove and drain the tofu.

In the same pan add 300 gm courgette roughly diced, 1 red pepper cut into bite size pieces and stir fry for 2 minutes. Then remove and drain.

To the hot wok add 1 tbsp peanut oil, 2 tbsp red curry paste, 10 gm finely chopped ginger and stir fry for a few seconds.

Add 3 tbsp light soy sauce, 2 tbsp maple syrup, 3 tbsp lime juice and stir together.

Then add the fried tofu, 400 ml coconut milk and simmer for 2 minutes.

Add the sauteed courgette and red pepper, salt to taste and cook for another 1 minute.

Add 15 gm finely chopped basil and stir. Transfer to a dish and serve hot with rice.
