Pork is one of the intregal part in the life of the Nagas. No festival or occasion is complete without pork dishes. This is an authentic pork dish of Nagaland. It is zero oil dish. Raphei Hoksa is a traditional Tangkhul Naga. It is an easy to cook and eat pork. This pork is stewed for hours in Sirarakhong chilli powder which is locally available in Urkhul district. This dish is not just delicious but superlatively delicious where the pork is juicy, tender, and goes perfectly with piping hot rice.

Ingredients for Tangkhul Naga Style Chilli Pork Recipe

  • 2 liter Water
  • 500 piece Pork, chunky gms
  • 2 tablespoon Red chilli powder
  • As required Salt

Directions: Tangkhul Naga Style Chilli Pork Recipe

step 1

  • STEP 1.Ground the ginger and garlic just to open the flavor. Keep aside.

  • STEP 2.Dry roast the sichuan peppercorns for a min or two. Crush it and keep aside.

step 3

  • STEP 3.Break the dry red chillies and add them to a bowl. Add hot water and soak them covered for 5-10 mins.

  • STEP 4.Pour the water and ground them in mortar and pestle into a paste.

step 5

  • STEP 5.In a pot add the pork, bamboo shoot water, salt and grounded red chilly paste, stir and mix well and cook on medium heat stirring them frequently for about 5-10 mins.

  • STEP 1.Add enough water. It may take 25 minutes.

  • STEP 6.Adjust the gravy consistency as per your requirement, add the grounded ginger garlic and crushed peppercorns, give a nice stir and cook for about 2 mins and take off the heat.
