A mexican recipe of tamales with pineapple. Sweet tamales are a Mexican dessert made from a sweet masa corn dough and filled with a variety of fruit, nut and sugary fillings. Common fillings include raisins, pineapples, fruit preserves, cajeta and dulce de leche. Each region and state has certain types of tamales, so many that the variety is estimated at between 500 and 5,000 throughout the country.

Ingredients for Tamales Dulces Recipe

  • 12 corn husk
  • As required Water enough to submerge the corn husks
  • 1/2 cup shortening or 1 stick
  • 1.50 pound masa harina or corn flour
  • 1/2 cup Sugar
  • 1 tablespoon baking powder
  • 1/2 tablespoon Ground Cinnamon
  • 1-20 ounce can of diced pineapple divided
  • 1/2 cup Raisins
  • 1/2 cup Peanuts
  • 1-2 ounce package shredded coconut
  • As required Water for steamer

Directions: Tamales Dulces Recipe

step 1

  • STEP 1.Soak the corn husks in warm water for 60 mins.

step 2

  • STEP 1.In a mixer whip the shortening until light and fluffy.

step 3

  • STEP 1.Slowly add the masa harina.

step 4

  • STEP 1.Add sugar, baking powder and cinnamon.

step 5

  • STEP 1.Mix on low for 1 minute.

step 6

  • STEP 1.Separate the diced pineapple from the juice can.

step 7

  • STEP 1.Slowly add the pineapple juice in the masa.

step 8

  • STEP 1.Add the pineapple, raisins, peanuts and shredded coconut.

step 9

  • STEP 1.Combine well and shake off the excess water from the corn husks.

step 10

  • STEP 1.Add a spoon of masa in the middle of corn husks.

step 11

  • STEP 1.Fold the pointy sides.

step 12

  • STEP 1.Heat water in a steamer.

step 13

  • STEP 1.Carefully add the tamales in the steamer. Cook for 1.5 hours and serve.
