Taiwanese Beef Noodle Soup Recipe

A flavoursome beef soup slow cooked over 4 hours with spices served with handmade noodles and tender pieces of beef. This recipe is time consuming but not too bad because the broth is not from bones. Total prepping and cooking time is about 2 hours. For a hearty dish like this is not bad at all instead it’s worth it.

Ingredients for Taiwanese Beef Noodle Soup Recipe

  • As required Ingredients for washing beef
  • 5 Ginger slices
  • 1 tablespoon Shao Xing wine
  • As required Ingredients for braising beef
  • 1 kilogram Beef
  • 2 teaspoon Oil
  • 1.50 tablespoon Sugar
  • 4 ginger slices
  • 4 garlic crushed cloves
  • 1/2 No.s medium onion cut into chunks
  • 2 No.s bay leaves
  • 3 piece hot dry chilli
  • 4 piece spring onion bulb
  • 1 piece Cinnamon
  • 2 piece Star anise
  • 2 piece dry orange peel
  • 1.50 tablespoon sichuan chilli paste
  • 1 tablespoon tomato paste
  • 1.50 tablespoon Soy Sauce
  • 1 teaspoon dark soy
  • As required Ingredients for noodles
  • 1 cup Noodles
  • 1/2 cup Beef stock or water
  • As required Blanched baby bok choy

Directions: Taiwanese Beef Noodle Soup Recipe

step 1

  • STEP 1.Fill a pot with water and add 1 kg beef cut into 1 inch pieces. Add 5 slices ginger and 1 tbsp shao xing wine. Cover and let the water come to a boil.

step 2

  • STEP 2.When it boils impurities from the meat will float to the surface with the frothing water. Turn off the heat and strain off all the water.

  • STEP 3.Wash the pieces of beef under running water to get rid of blood scrum. Drain the beef in a sieve and let it dry completely. Keep aside.

step 4

  • STEP 4.1 heat a wok and add 1 ½ tsp oil and swirl to coat the surface of the hot wok. Add the 1 kg beef pieces and spread them out so that they are all touching the hot surface of the wok. Let it fry on each side for a few minutes to get a brown colour.

  • STEP 5.2 turn the heat to low and push the beef to the side. Add 1 ½ tbsp sugar and stir till it melts and turns to a caramel colour. Take care not to burn the sugar.

  • STEP 6.3 mix the beef with the caramelised sugar so that the sugar coats the beef.

  • STEP 7.4 keep the heat on low and add 4 slices of ginger, 4 cloves crushed garlic, ½ medium onion cut into chunks, 2 pay leaves, 3 pieces of hot dry chilli, 4 pieces of spring onion bulb,1 stick cinnamon , 2 pieces star anise, 2 pieces of dry orange peel, 1 ½ sichuan chilli paste, 1 tbsp tomato paste. Mix all the ingredients together. Stir for 2 to 3 minutes till aromas are released.

  • STEP 8.5 next add 1 ½ tbsp soy sauce, 1 tsp dark soy, and mix well.

  • STEP 9.6 transfer the contents of the wok to a clay pot and add water to the level of the beef. Rinse the wok with drinking water and add it to the clay pot.

  • STEP 10.7 cover and bring it to a boil. Add ½ tbsp salt and stir.

  • STEP 11.8 turn the heat to low, cover the pot and simmer for 3 to 4 hours. The meat should be soft.

  • STEP 12.9 in a soup bowl add ½ cup unseasoned beef stock.

step 13

  • STEP 13.10 to prepare the noodles, fill a pot with water and bring it to a boil. Add 1 cup homemade noodles in. The temperature of the water will drop a little. Wait for it to come back to a boil. Then add 1 cup of cold water to drop down the temperature again.

step 14

  • STEP 14.11 fresh noodles cook fast. It takes about 2 minutes.

step 15

  • STEP 15.12 once the noodles are cooked strain them in a sieve and place them in the bowl with beef stock.

step 16

  • STEP 16.13 then spoon the red beef soup from the claypot over the noodles. Add according to taste.

step 17

  • STEP 17.14 place a few pieces of beef on the noodles.

step 18

  • STEP 18.15 add a few pieces of blanched baby bok choy.

  • STEP 19.16 taiwanese beef noodle soup is ready.
