  • 1/4 cup Tomato Puree
  • 1 tablespoon Tamarind Pulp

  • 1/2 cup Water

Cooking Directions

  • STEP 1.Heat oil in a pan and add cumin seeds and mustard seeds. Let them splutter.
  • STEP 2.Add sliced onions and cook until they turn golden brown and caramelized.
  • STEP 3.Add ginger-garlic paste, turmeric powder, red chili powder, and salt. Cook for a minute.
  • STEP 4.Add tomato puree and cook until the oil separates from the masala.
  • STEP 5.Add tamarind pulp, jaggery, and water. Mix well and simmer for 10 minutes.
  • STEP 6.Garnish with coriander leaves and serve hot with rice or bread.

Cooking Tips

  • To caramelize onions faster, add a pinch of sugar while cooking.
  • Adjust the sweetness and tanginess according to your taste by adding more or less jaggery and tamarind pulp.
