  • 1.65 cup sweet potato (shakarkand) cubesfinely chopped spring onions whites (with ” green stem)butterplain flour (maida)milkfresh creamsalt to tastefreshly ground black peppercorns (kalimirch) to taste

Directions: Sweet Potato & Spring Onion Soup Recipe

  • STEP 1.Combine the sweet potato, spring onions and 2 cups of water and pressure cook for 3 whistles.Allow the steam to escape before opening the lid.Blend in a mixer to a smooth puree and strain the mixture using a strainer. Keep aside.Heat the butter in a deep non-stick pan, add the plain flour and cook on a slow flame for 30 seconds.Add the milk , mix well and cook on a slow flame for 4 to 5 minutes, while stirring continuously with the help of a whisk.Add the sweet potato-spring onion mixture, cream, salt and pepper, mix well and cook on a slow flame for another 4 to minutes, while stirring occasionally.Serve immediately
