Simple delicious side dish subzi.. prepared from sweet potato, bottle gourd, peas, capsicum and regular spices.
Can be served with wheat rotis and dal.
Ingredients for Sweet Potato Mix Veggies Subzi Recipe
1/4 cup Sweet potato
0.13 cup bottle gourd pieces (dudhi)
0.13 cup Fresh green peas
0.13 cup cup green capsicum
1/2 tsp Oil
1/4 tsp mustard and cummin seeds
0.13 tsp Turmeric powder
1/2 g pinch asafoetida (hing)
1/2 tsp Red chilli powder
1/2 tsp Cumin and coriander seeds powder
to taste Salt
1/2 tbsp Jaggery
1/2 tbsp Lemon juice
As Required Freshly chopped green coriander leaves
Directions: Sweet Potato Mix Veggies Subzi Recipe
STEP 1.In kadhai add heat oil, do tempering of mustard cumin seeds,add turmeric powder and asafoetida. Add capsicum pieces and green peas,mix and saute for 1 minute.
STEP 2.Add chopped bottle gourd pieces,mix and add salt to taste,add 1 glass of water,cook on low flame for 5 minutes.
STEP 3.Now add cubed sweet potato pieces,mix and cook till all veggies are tender.
STEP 4.Add red chilli powder and dhaniya and jeera powder, jaggery, lemon juice,mix and cook for 2 minutes.
STEP 5.Garnish with chopped fresh coriander leaves. Serve hot with rotis.
