  • STEP 1.Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • STEP 2.Peel and dice the sweet potatoes into small cubes.
  • STEP 3.In a bowl, toss the sweet potato cubes with olive oil, salt, and pepper.
  • STEP 4.Spread the sweet potato cubes evenly on the prepared baking sheet.
