- 500 piece Sweet potatoespeeled and cut into bite size gm
- 1 Water for boiling potatoes ltr
- 1 Ginger finely chopped cm
- 6 Garlic finely chopped cloves
- 40 gram Coriander finely chopped
- 1 teaspoon Chili powder
- 1 Onion finely chopped Nos
- 1 teaspoon Ground white pepper
- 400 gram Coconut milk
- 750 milliliter Chicken stock or vegetable stock
- As required Salt

How to Make Sweet Potato And Coriander Soup Recipe
1 peel and cut 500 gm sweet potatoes into bite size pieces.
2 transfer the chopped potatoes to a large pot filled with 1 ltr water and boil for 10 minutes till soft.
3 remove the potato from the pot and drain them.
4 in a blender jar, add 1 cm ginger finely chopped, 6 cloves garlic finely chopped, 40 gm coriander finely chopped and 1 onion finely chopped and blend for 3 to5 minutes to get a smooth mixture.
5 to this add the soft bodied sweet potato and blend for 1 minute.
6 then empty the contents of the blender jar into a sauce pan.
7 add 1 tsp chilli powder, 1 tsp white pepper powder, salt to taste.
8 add 400 ml coconut milk and 750 ml chicken or vegetable stock.
9 mix together well till fully incorporated.
10 bring the soup to a boil.
11 at this stage turn the heat to medium and simmer for 15 to 20 minutes. Then turn off the heat.
12 transfer to a serving bowl and garnish with a sprig of coriander.
