Semolina used in the meethai gives an unexpected crunch in the meethai. It can be prepared from basic ingredients like milk, milk powder, sugar, cardamom powder. Garnished with pistachios and almonds.

Ingredients for Suzi Meethai Recipe

  • 1 cup Semolina
  • 1 teaspoon Sugar
  • 1 cup Milk
  • 1 teaspoon Cardamom powder
  • 1 No.s milk powder pack
  • As required Saffron strand A few
  • 2 tablespoon Desi ghee
  • As required Almonds and Pistachios A few

  • STEP 1.Take a cup of semolina and grind it well.

  • STEP 2.Take a pan,  add a full cup of milk in it and heat it up. Add some cardamom powder,  saffron strings.  cook the milk till it changes its color.

  • STEP 3.Now after the colour appears, add semolina in it and cook it for a few minutes on low flame. Make sure it cooks properly. Remember to make it as a dough. Transfer the semolina into a bowl and then let it cool.

  • STEP 4.For chaashni, take some boiling water and sugar along with some cardamom powder and saffron/ kesar. Cook on medium flame and let the sugar boil. Do not prepare a thick chaashni, and keep it sweet as per your  preference. It is an initial process so do not over cook.

  • STEP 5.Switch the flame off after 5 minutes.

  • STEP 6.The semolina is cooled now, add some milk powder make sure the semolina is semi-warm. Add  a spoon of ghee and mix nicely. Kneed this mixture properly for about 5 minutes.

  • STEP 7.Make a smooth dough. And take a portion of it and smoothen it using your hands

  • STEP 8.Now roll these portions into a thick spread. Take a small circle cutter and cut some pieces as well

  • STEP 9.Take a deep frying pan, add 2 cups of ghee and heat up the ghee.

  • STEP 10.Add some semolina meethai and deep fry, make sure the mixture is crispy. When they look ready add these balls into the chaashni.

  • STEP 11.Keep the meethai in the chaashni for 10 minutes and serve fresh with some almonds and pistachios.
