About Sumashijiru Recipe:

A japanese recipe of clear soup also called Suimono. Sumashijiru is a Japanese clear soup also called Suimono. Sumashijiru can be served for any occasion from everyday to more formal course meals; however, it does have a bit more sophisticated feel than Miso Soup. Sumashijiru is a very simple soup, so it is important to use good quality broth. We use Ichiban Dashi, broth from the combination of Kombu dried kelp and Katsuobushi dried bonito flakes, which has a more complex flavor than Dashi with only Katsuobushi.

  • 4 x2" Kombu
  • As required handful of Katsuobushi
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sake
  • 1/4 teaspoon 1/2 salt

  • 1/2 bunch Mitsuba

How to Make Sumashijiru Recipe

STEP 01

In a pot boil kombu and water.

STEP 02

Remove kombu and add katsuobushi and strain.

STEP 03

Mix dashi with soy sauce, salt and sake.

STEP 04

Add tofu and cook the soup for a minute, season with mitsuba and serve.
