Sumashijiru Recipe

A japanese recipe of clear soup also called Suimono. Sumashijiru is a Japanese clear soup also called Suimono. Sumashijiru can be served for any occasion from everyday to more formal course meals; however, it does have a bit more sophisticated feel than Miso Soup. Sumashijiru is a very simple soup, so it is important to use good quality broth. We use Ichiban Dashi, broth from the combination of Kombu dried kelp and Katsuobushi dried bonito flakes, which has a more complex flavor than Dashi with only Katsuobushi.

Ingredients for Sumashijiru Recipe

  • 3 cup Water
  • 4 x2" Kombu
  • As required handful of Katsuobushi
  • 1 tablespoon Soy sauce
  • 1 tablespoon Sake
  • 1/4 teaspoon 1/2 salt
  • 1/2 block of Tofu
  • 1/2 bunch Mitsuba

Directions: Sumashijiru Recipe

  • STEP 1.In a pot boil kombu and water.
  • STEP 2.Remove kombu and add katsuobushi and strain.
  • STEP 3.Mix dashi with soy sauce, salt and sake.
  • STEP 4.Add tofu and cook the soup for a minute, season with mitsuba and serve.
