Cooking Directions

  • STEP 1.Soak mung beans overnight and cook until soft. Mash the beans and mix with grated coconut, jaggery, and cardamom powder.
  • STEP 2.In a separate bowl, mix rice flour, lentil flour, salt, and water to make a smooth batter.
  • STEP 3.Take a small portion of the mung bean mixture and shape it into a ball. Dip it into the batter and deep fry until golden brown.
  • STEP 4.Serve the sukhiyan hot as a snack or as a dessert. It can be stored in an airtight container for up to 2 days.

Cooking Tips

  • Make sure to cook the mung beans until they are soft and easily mashable.
  • Adjust the sweetness of the filling according to your preference by adding more or less jaggery.
  • For a healthier version, you can steam the sukhiyan instead of deep frying it.
