The addition of jaggery makes the fritter mildy sweet in taste, and it is a common feature in small shops and eateries where people have it with a cup of tea. Serve it for breakfast or as a side dish to your meals, you would not be disappointed. A traditional south indian healthy and sweet snack. Ingredients for Sukhiyan Recipe

  • 0.13 cup Green gram
  • 0.31 cup Water
  • 0.09 cup Maida
  • 1/4 tablespoon Rice powder
  • 0.03 teaspoon Turmeric powder
  • As required Salt
  • 0.13 cup Grated coconut
  • 0.13 teaspoon Cardamom powder
  • 0.09 cup Sugar
  • As required Cooking Oil

Steps To Prepare

  • STEP 1.In a pressure cooker, boil 1 cup of green gram with 2 cups of water till 5-6 whistles In a bowl add ¾ cup of maida, 2 tsp rice powder, ¼ tsp turmeric powder and a pinch of salt.

Cooking Directions

  • STEP 1.In a bowl, add maida, rice powder, turmeric powder and a pinch of salt.
  • STEP 2.Gradually add water to make a smooth batter without lumps.
  • STEP 3.In a pan, transfer the green grams from the pressure cooker. To it, add grated coconut and sugar. Heat the mixture on medium flame until the sugar has melted completely.
  • STEP 4.Keep it aside to cool down.
  • STEP 5.Once the mixture is cool, roll the mixture and make medium size balls.
  • STEP 6.Preheat a deep-bottomed pan with cooking oil.
  • STEP 7.Dip the green gram balls into the batter and fry them in the pan, until golden and crispy. Repeat the process for the remaining balls.

Pro Tip

  • STEP 1.Instead of sugar, you can also make jaggery syrup.
  • STEP 2.If you are using soaked green gram, boil in the pressure cooker for 2-3 whistles, since it is already softened.

Storage And Serving Method

  • STEP 1.Serve with tea. The snack is flavourful on its own, it does not need an accompaniment.
