  • 1 cup Mashed Potatoes
  • 1/2 teaspoon Cumin Seeds
  • 1/2 Onion, Finely Chopped

Cooking Directions

  • STEP 1.Peel the onions and cut off the tops. Scoop out the center of the onions, leaving a hollow shell.
  • STEP 2.In a bowl, mix together mashed potatoes, spices, herbs, and salt. Stuff the onion shells with this mixture.
  • STEP 3.Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and saut茅 until golden brown.
  • STEP 4.Add ginger-garlic paste and cook for a minute. Then add tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
  • STEP 5.Place the stuffed onions in the pan and pour the tomato gravy over them. Cover and cook on low heat for about 20-25 minutes, or until the onions are tender.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with rice or roti.

  • Choose medium-sized onions that are firm and have a flat bottom for easy stuffing.
