Utapam is a type of dosa and originated from South India. Very famous all over India. I have given a twist to this uttapam. I have stuffed potato masala with cheese in it. Lets see how to make it.
STEP 1.Wash rice and dal 2 to 3 times and soak it for 5 to 6 hrs. While soaking add fenugreek seeds. Grind it finely. While grinding add soaked puffed rice to it. Make thick batter than normal dosa
STEP 2.Keep it for fermentation for 8 hrs. After fermenting add salt .
STEP 3.Now take a kadai add oil curry leaves peanut sarso garlic onion and fry till golden brown. Now add mashed potatoes salt and mix well. Stuffing is ready now.
STEP 4.Take a dosa tawa pour a laddle full of batter on tawa and spread a thick layer now put potato masala all over and and put cheese over it. again pour batter from upper side on potato masala and cover it nicely and cook it from both sides and till golden with jelp of butter. And stuffed cheesey dosa is ready now. Serve hot with sambhar or chutney.
