  • 1/2 tablespoon Oil
  • 1/4 teaspoon Mustard Seeds
  • 1/4 teaspoon Cumin Seeds

  • 1/2 Onions, Finely Chopped
  • 1/4 tablespoon Ginger Garlic Paste
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/4 teaspoon Coriander Powder
  • As required Salt To Taste
  • 1/2 tablespoon Peanuts, Roasted And Crushed

Cooking Directions

  • STEP 1.Wash and slit the brinjals lengthwise, keeping the stem intact.
  • STEP 2.In a pan, heat oil and add mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add onions and saut茅 until golden brown.
  • STEP 4.Add ginger-garlic paste, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  • STEP 5.Add peanuts and cook for a few minutes.
  • STEP 6.Stuff the masala mixture into the brinjals.
  • STEP 7.Heat oil in a pan and place the stuffed brinjals. Cook on low heat until the brinjals are tender and the skin is crispy.
  • STEP 8.Serve hot with rice or roti.
