  • 2 Small To Medium Sized Bitter Gourds
  • 1/2 cup Groundnuts
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • as required A Few Curry Leaves
  • 1/2 Onion, Finely Chopped
  • 1/2 teaspoon Ginger Garlic Paste
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • As required Salt To Taste

Cooking Directions

  • STEP 1.Wash and slit the bitter gourd lengthwise, remove the seeds and keep aside.
  • STEP 2.In a pan, dry roast groundnuts until they turn golden brown. Allow them to cool and then grind them into a coarse powder.
  • STEP 3.In a separate pan, heat oil and add mustard seeds, cumin seeds, and curry leaves. Once they splutter, add chopped onions and saut茅 until golden brown.
  • STEP 4.Add ginger-garlic paste, turmeric powder, red chili powder, and the groundnut powder. Mix well and cook for a minute.
  • STEP 5.Stuff the bitter gourd with the groundnut masala mixture and secure with toothpicks.
  • STEP 6.In the same pan, heat oil and place the stuffed bitter gourd. Cook on low heat, turning occasionally, until the gourd is tender and cooked through.
  • STEP 7.Serve hot as a side dish or as a main course with rice or roti.
