  • 1 tablespoon Oil
  • 2 tablespoon Butter
  • 5-6 large onions, finely sliced
  • As required salt and pepper
  • 1/2 teaspoon Sugar
  • 2 tablespoon Flour
  • 0.67 cup apple cider OR red wine
  • 8 cup vegetable or beef broth
  • 2-3 sprig fresh thyme
  • As required baguette crostini or croutons
  • As required Gruyere cheese, grated

  • STEP 1.In a large dutch oven or saucepan heat oil and butter over medium heat.

  • STEP 2.Add onions and stir until they are well coated.

  • STEP 3.Cover and cook onions for 15 minutes.

  • STEP 4.Remove the lid and season the onions with salt, pepper and sugar.

  • STEP 5.Cook the onions for an additional 30 minutes, stirring often.

  • STEP 6.Onions should be deep golden brown.

  • STEP 7.Once onions are caramelized stir in flour and cook for 1 minute.

  • STEP 8.Add broth and fresh thyme and bring the mixture to a boil.

  • STEP 9.Reduce heat to medium-low and simmer for 30 minutes.

  • STEP 10.Ladle soup into individual, oven-safe bowls and top with crostini and cheese.

  • STEP 11.Bake at 375°f until the cheese is melted and bubbly.
