  • 1/4 inch Pork loin cut into thick strips 280 gms
  • 1/4 piece Onion cut into strips and separated
  • 1 inch Green chilliescut into s lengthwise 3 to 4 Nos
  • 6-8 Dry red chillies cut into halves Nos
  • 3 tablespoon Oil
  • 2 teaspoon Sichuan peppercorns
  • 3 Garlic crushed cloves
  • 3 Ginger slices
  • 6-8 Dry red chillies Nos
  • 0.62 teaspoon Salt
  • As required Ingredients for pork marinade
  • 1 tablespoon Soy sauce
  • 1 tablespoon Chinese cooking wine
  • 1 teaspoon Five Spice Powder
  • 1/4 Baking soda
  • 1 teaspoon Cornstarch
  • 1/2 teaspoon Dark soy sauce

Directions: Stir Fry Pork With Green Chillies Recipe

step 1

  • STEP 1. cut 280 gm pork loin into ¼ inch thick strips.

step 2

  • STEP 1. in a large bowl add 700ml water, add 1 tsp salt and place the pork strips in the water. Let it soak for 10 minutes.

  • STEP 1. after ten minutes remove the pork from the salt water. Rinse it with plain water and squeeze out the excess moisture.

  • STEP 1. place 280 gm pork strips in a bowl, add 1 tsp soy sauce, 1 tsp chinese cooking wine, 1 tsp five spice powder, ⅛ tsp salt, ¼ baking soda to tenderise the meat, 1 tsp cornstarch and ½ tsp dark soy sauce for color. Mix together till well combined. Let it marinate for 15 minutes.

  • STEP 1. cut ¼ onion into strips and separate. Keep aside. cut 3 to4 green chilies in 1 inch pieces lengthwise.

  • STEP 1.cut 6 to 8 dry red chilies into halves and keep aside. heat the wok till smoking hot and then add 3 tsp oil and swirl to cover the hot surface with oil. Let the oil heat till smoking.

  • STEP 1.then dad the marinated pork. Spread it out to let most of the pork touch the surface of the hot wok. Cook on high for 15 seconds. Toss it to allow the other side to sear as well. Continue to cook and flip the pork for 2 to 3 minutes till it is cooked through.

  • STEP 1. once done turn off the heat and tilt the wok away from the pork and remove the pork with a slotted spoon. The excess oil will drain to the other side of the wok. Set it aside.

  • STEP 1.turn the heat to low and return the wok to the heat. To the same oil add 2 tsp sichuan peppercorns and allow it to slowly season the oil. When the peppercorn changes color, take them out.

step 10

  • STEP 1. to this hot seasoned oil add 3 cloves crushed garlic and 3 slices of ginger, 6 to 8 dry red chilies and stir until fragrant.

step 11

  • STEP 1. add the sliced green chilies and stir on medium heat. Add ½ tsp salt which helps to soften the peppers.

step 12

  • STEP 1. add ¼ onion sliced and stir fry till desired texture is reached. then introduce the cooked pork back into the wok. Mix well till all the ingredients are combined. Serve in a bowl.
