A spicy tender jackfruit curry from Sri Lanka. It is usually a shallow fry of jackfruit vegetables mixed with spices. This is an awesome and very simple to cook. The jackfruit pieces are cooked in onion tomato sauce or puree. It is one of those curries that have comfortable and homely feeling because kathal is a very common fruit in the streets of Sri Lanka and even in North India. A must try recipe.

Ingredients for Srilankan Jackfruit Curry Recipe

  • 1 teaspoon Oil
  • 4 No.s Garlic Cloves
  • 1 piece Ginger
  • 2 No.s Onions
  • 2 sprig Curry leaves
  • 1 cup Jackfruit Raw
  • As required Salt
  • 2 cup Water
  • As required Ingredients for curry powder
  • 1/2 teaspoon Coriander seeds
  • 1/2 teaspoon Cumin seeds
  • 1/2 teaspoon Whole black peppercorns
  • 1/2 teaspoon Mustard seeds
  • 4 No.s Cloves
  • 3 No.s Cardamom
  • 1 stick Cinnamon piece
  • 1 teaspoon Fennel seeds
  • 8 No.s Dry red chillies
  • As required Ingredients for Pol sambal
  • 1 cup Fresh coconut
  • 1/2 cup Pearl Onions
  • 1 No.s Onion
  • 1 No.s Lemon

Directions: Srilankan Jackfruit Curry Recipe

step 1

  • STEP 1.To make the Sri Lankan curry powder, in a hot pan on low to medium heat dry roast ½ tsp coriander (dhania) seeds, ½ tsp cumin seeds (jeera), ½ tsp whole black peppercorns, ½ tsp mustard seeds, 4 cloves (laung), 3 cardamom (elaichi), 1 inch cinnamon stick (dalchini), 1 tsp fennel seeds (saunf), 2 dry red chillies for 3 to 4 minutes. Allow to cool.

  • STEP 1.Transfer the roasted ingredients to the small grinding jar and blend to a smooth fine powder. Keep aside.

  • STEP 1.To make the pol sambal, in the grinding jar add 1 cup freshly grated coconut,

  • STEP 1.6 dry red chillies, ½ cup pearl onions (sambar onions), 1 regular onion diced, juice of 1 lemon. Grind without adding water, to get a coarse mixture.

  • STEP 1.6 to make the curry, preheat a pressure cooker and add 1 tsp oil, 4 cloves chopped garlic, 1 inch chopped ginger, 2 sprigs curry leaf, 2 onions thinly sliced. Saute till the onions turn soft and lightly browned. This takes 2 to 3 minutes.

  • STEP 1.Add the powdered sri lankan curry paste and the pol sambal into the cooker along with 1 ½ cup chopped tender jackfruit and salt to taste. Mix well together.

  • STEP 1.Add 2 ½ cups water and pressure cook for 3 to 4 whistles. When the pressure has released, open the cooker. The curry will be thick. Serve hot with rice.
