  • As required Ingredients for masala powder
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Fennel seeds
  • 1 teaspoon Black peppercorns
  • 1 stick Cinnamon piece
  • 3 No.s Green cardamom
  • 6 No.s Dry red chillies
  • As required Ingredients for curry
  • 1 teaspoon Oil
  • 4 No.s Chopped garlic cloves
  • 1 piece Ginger
  • 10 No.s Curry leaves
  • 2 No.s Onions
  • 300 gram Chicken
  • As required Sri Lankan masala powder A few
  • 1/4 teaspoon Turmeric powder
  • As required Salt

step 1

  • STEP 1.-1)to make the sri lankan curry powder, on a hot pan add 1 tsp coriander seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp black peppercorns, 1 inch cinnamon stick, 3 cardamom, 2 to 3 dry red chillies. Roast for 3 to 4 minutes till the aroma of the spices comes through. Turn off the what.

  • STEP 2.-2)transfer roasted whole spices to the small jar to the mixer grinder and grind to a smooth powder.

  • STEP 3.-3)in a pressure cooker add 1 tsp oil, 4 cloves chopped garlic, 1 inch chopped ginger, 8 to 10 curry leaves, 2 to 3 dry red chillies, 2 onions thinly sliced. Saute until onions caramelise.

  • STEP 4.-4)then add 300 gms chicken curry cut pieces, sri lankan masala powder, ¼ tsp turmeric, salt to taste. Mix to combine the chicken well with the masala.

  • STEP 5.-5)add 1 cup of water and pressure cook for 3 to4 whistles. Allow the pressure to release naturally.

  • STEP 6.-6)open the cooker and add 200 ml coconut milk. Brisk boil for 5 minutes. Turn off the heat.
