Ingredients for Spring Vegetable Stew Recipe

  • 2 tablespoon unsalted butter
  • 6 scallions, white parts thinly sliced, green part reserved
  • 4 cup Chicken Broth
  • 1 pound small red potatoes, halved, quartered if large
  • 1 pound asparagus, cut into 1/4 inch slices on a bias
  • 1 bunch spinach, stems removed and torn
  • 2 cup frozen peas
  • As required Coarse salt and pepper
  • 2 tablespoon fresh dill, chopped

Directions: Spring Vegetable Stew Recipe

  • STEP 1.In a large pot, melt butter over medium heat.

  • STEP 2.Add scallion whites and cook until softened, about 4 minutes.

step 3

  • STEP 3.Add broth, 4 cups of water, and potatoes to the pot.

step 4

  • STEP 4.Bring to a boil, and cook until potatoes are tender, about 12 minutes.

step 5

  • STEP 5.Add asparagus and cook for 3 minutes more.

step 6

  • STEP 6.Stir in spinach and peas, and cook until spinach is wilted and peas are heated through, about a minute more.

step 7

  • STEP 7.Season with salt and pepper, and stir in dill and scallion greens to serve.
