Ohitashi is a Japanese word that refers to a method of infusing vegetables with umami, savoury and subtle flavour. The method is used to prepare many dishes that comprise a lot of veggies.  Ohitashi is one of the healthiest ways to cook your vegetables as it does not require any oil, coating, or deep-frying. It truly lets you celebrate the natural flavour of the vegetable you are using, in this case, it is spinach.   • 1 bunch Spinach
  • 1/4 cup Dashi
  • 1 tablespoon Soy Sauce
  • 1/2 teaspoon Sugar
  • As required Katsuobushi

  • STEP 1.In a bowl mix dashi, soy sauce and sugar.

  • STEP 1.Boil water in a large pot.
  • STEP 1.Now add the spinach
  • STEP 2.After 30 seconds, turn off heat and drain the water.
  • STEP 3.Let the spinach cool down, and squeeze out the water from spinach.
  • STEP 4.Cut the spinach and add the dashi and sauce mix
