Ingredients for Spicy Tomato Rice Recipe

  • 1 teaspoon Gingelly oil
  • 1 teaspoon Mustard seeds
  • 10 No.s Sambar onions finely chopped
  • 1 inch Ginger grated
  • 1 sprig Curry leaf chopped
  • 3 No.s Tomatoes blanched, skinned and chopped fine
  • 1/2 teaspoon Turmeric powder
  • 1 As required Sambar powder salt tsp
  • 1/2 teaspoon Cardamom powder
  • 1 cup Cooked rice
  • As required Chopped coriander leaves
  • 1 tablespoon Ghee

How to Make Spicy Tomato Rice Recipe

In a preheated pan add 1 tsp gingelly oil, 1 tsp mustard seeds. Allow to crackle.

Next add 10 finely chopped sambar (pearl) onions, 1 inch ginger grated, 1 sprig curry leaf chopped. Saute on medium heat till onions soften and begin to change colour.

Then add 3 blanched and skinned tomatoes chopped fine. Give it a stir. Add ½ tsp turmeric (haldi) powder, 1 tsp sambar powder, salt to taste. Mix well to combine all the masala with the tomato and onions. Add ½ tsp cardamom (elaichi) powder. Stir and cook for 1 to 2 minutes till

At this stage add 1 cup cooked rice. Gently mix to ensure that the rice gets well coated with the tomato masala but does not get smashed.

Turn the heat to low, cover the pan and let the tomato rice cook for 3 to 4 minutes so that all the flavours get absorbed by the rice.

Turn off the heat. Add chopped coriander leaves as required, add 1 tbsp ghee for flavour. Serve hot.
