A salad of juicy soft shredded chicken tossed with crunchy vegetables in a spicy tangy sauce. Spicy shredded chicken salad made with steamed chicken breasts. With steam cooking, the chicken loses little to no moisture and could still keep its tenderness and nutritional value.

Ingredients for Spicy Shredded Chicken Salad Recipe

  • As required Ingredients for the salad
  • 3 gram Chicken legs or a 200 piece of chicken breast
  • 1 cup Cucumber shredded
  • 1 cup Carrot shredded
  • As required Coriander leaves a handful chopped
  • As required Ingredients for sauce
  • 2-3 tablespoon jasmine tea
  • 1 tablespoon garlic minced
  • 1/2 tablespoon ginger minced
  • 1 tablespoon sichuan chilli bean paste
  • 2 teaspoon chinese black vinegar
  • 2 teaspoon sesame oil

Directions: Spicy Shredded Chicken Salad Recipe

step 1

  • STEP 1.1 in a pot of water add 3 chicken legs or a 200 gm piece of chicken breast and boil for 8 minutes until cooked through.

  • STEP 2.2 take it out of the water and let it cool

step 3

  • STEP 3.3 when chicken is completely cooled shred it into strips and transfer it to a large bowl.

step 4

  • STEP 4.4 add 1 cup shredded cucumber, 1 cup shredded carrot, a handful of chopped coriander leaves and set aside.

step 5

  • STEP 5.5 for the sauce, add 2 to 3 tbsp jasmine tea, 1 tbsp minced garlic, ½ tbsp minced ginger, 1 tbsp sichuan chilli bean paste, 2 tsp chinese black vinegar, 2 tsp sesame oil. Mix well together and check for salt. If too salty, add a little more jasmine tea.

  • STEP 6.6 pour the sauce into the large bowl with the chicken and vegetables. Toss well together to ensure that all the ingredients are coated with the sauce.

  • STEP 7.7 top with sesame seeds.
