These are savoury ghughras prepared from outer covering of maida and wheat flour and filled with potato and dried green peas stuffing.This is one of the famous street foods of Jamnagar and surrounding areas.It is served with spicy and sweet chutneys.

Ingredients for Spicy ghughra Recipe

  • 1/2 cup maida
  • 1/2 cup Wheat flour
  • As Required Salt
  • 1 tbsp Oil
  • 2 Pieces Potatoes
  • 1/4 cup Dried peas
  • 1/2 tbsp Oil
  • 1/2 teaspoon Cumin seeds
  • 1/2 g Ginger green chilli paste
  • 1/2 Tbsp Turmeric
  • 1/2 Tbsp Red chilli powder
  • 1/2 Tbsp Coriander cumin powder
  • 1/2 Tsp Garam masala
  • 1/2 Tsp Chaat masala
  • As Required Salt
  • 1/2 Tsp Lemon juice
  • 1 Handful Green coriander
  • As Required For serving
  • As Required Red chutney(garlic
  • 1/2 Tbsp Red chilli powder
  • 1/2 Tbsp lemon juice)
  • 1/2 Tsp reen chutney(coriander
  • 1 Pieces reen chillies
  • As Required salt)
  • 1 Tbsp Dates and tamarind Chutney
  • As Required Sev
  • As Required Masala peanuts

Directions: Spicy Ghughra Recipe

  • STEP 1.Soak dried peas for minimum 4 hours.
  • STEP 2.Cook potatoes and soaked peas in cooker.
  • STEP 3.Knead a dough from maida,wheat flour,salt,oil and water.
  • STEP 4.Prepare all chutneys.
  • STEP 5.Take a pan and heat oil.
  • STEP 6.Add cumin seeds and ginger chilli paste.
  • STEP 7.Now add chopped potatoes and peas.
  • STEP 8.Add all spices,salt and lemon juice.
  • STEP 9.Sprinkle green coriander.Our stuffing is ready.
  • STEP 10.Now take small ball from dough and roll out small poori.
  • STEP 11.Place a spoonful of stuffing and fold into half moon shape.
  • STEP 12.Now make small pleats on upper margin and form design or can make design with fork also.
  • STEP 13.Prepare all ghughraa similarly.
  • STEP 14.Fry all ghughraa in oil at medium slow flame.
  • STEP 15.Now take ghughraa in a serving plate and make holes in middle of each ghughraa.
  • STEP 16.Put red chutney,green chutney,date tamarind chutney over these ghughraa
  • STEP 17.Sprinkle sev and masala peanuts and serve.
