  • As required * ½ tsp black pepper

  • 1.50 tbsp * cornflour mixed with water (for slight thickness)

Directions: Spice Mushroom Reloaded Recipe

  • STEP 1.1. Prepare the Dough:
  • STEP 2.1. Mix whole wheat flour, maida (if using), salt, and a tsp of oil.
  • STEP 3.2. Gradually add water and knead into a soft, smooth dough.
  • STEP 4.3. Cover and rest for 20 minutes.
  • STEP 5.Cook the Mushroom Chilli Filling:
  • STEP 6.1. Heat oil in a pan on high flame.
  • STEP 7.2. Add garlic, ginger, and green chilies. Sauté for 30 seconds.
  • STEP 8.3. Add onions and capsicum. Stir-fry for 2–3 minutes until slightly soft but still crisp.
  • STEP 9.4. Add sliced mushrooms. Cook on high heat until they release and reabsorb their moisture.
  • STEP 10.5. Add soy sauce, chili sauce, ketchup, vinegar, black pepper, and salt. Mix well.
  • STEP 11.6. Add cornflour slurry and stir till the sauce thickens slightly and coats the mushrooms.
  • STEP 12.7. Garnish with spring onions and set aside.
  • STEP 13.3. Make the Wraps:
  • STEP 14.1. Divide the dough into equal balls and roll out thin rotis.
  • STEP 15.2. Roast on a hot tawa with ghee or oil until both sides are golden and soft.
  • STEP 16.3. Keep warm in a cloth.
  • STEP 17.4. Assemble the Kathi Rolls:
  • STEP 18.1. Place a cooked wrap on a plate.
